Kiwi Tandoor

The Kiwi Tandoor is a handcrafted product made by highly skilled artisans that have been making tandoors for generations in India. It consists of a good quality stainless steel (304 grade) housing that incases a clay tandoor oven. Tandoors are becoming increasingly popular as they allow for oil free and fat free cooking as fat drips down whilst food is cooked.

The Tandoor is fired using lump charcoal or charcoal briquettes, which heat the clay oven to very high temperature around 400 degrees celsius, making it much hotter than a conventional oven. The heat is controlled by the amount of oxygen that is allowed into the tandoor. Tandoor has a small window at the bottom that is opened and closed to control the air flow.

Food is placed into a metal skewer, which is then inserted vertically into the clay oven. The food is cooked very quickly as it is surrounded by the radiant heat from the clay. The skewers transfer the heat from the charcoal to the center of the meat. There is no need to keep turning the skewers as the food is cooked uniformly from all around. This method of cooking seals all the inherent flavours and juices into the food, ensuring that it remains moist and succulent, and at the same time giving it the unmistakable authentic tandoori texture and taste.

You can cook various types of breads, Naan, Peshwari naan, Garlic naan, Keema naan, Roti bread and flat bread. This is achieved by simply slapping the desired bread directly into the inside clay wall of the Tandoor.
